There’s a reason we have eggplant on our pizzas – we follow kosher law, so we can’t have meat with dairy (cheese) on our pizzas. About the Eggplant
The eggplant is a beautiful vegetable. It has a deep purple color and it’s glossy. The taste is unique and the texture is not like other vegetables. You can usually get eggplant any time of year, but they are bets from August through October.
